My family and I recently ordered Feges BBQ from Goldbelly on a whim when there was a special discount offered just before we were heading out for a football game at our daughter’s university in Illinois.

Traveling all the way from Texas and without a smoker that fits in our carry-on, we figured ordering some Feges to be sent to our destination would be a great way to bring a little bit of Texas to the Midwest.

We weren’t quite sure what to expect, but we were thrilled with the amount of food, the easy warming instructions and the flavors.

In fact, it tasted like Patrick Feges and Erin Smith of Feges BBQ just made our meal minutes before in the hotel kitchen rather than having prepared it days before all the way back in Houston, vacuum-sealing it, putting it on ice and then having Goldbelly transport it north where we took over and sous vide it all (simmered it in a low-temperate water bath) in the one pot and one pan our hotel room offered.

Our food shipment arrived on time on the day we selected online and came packed carefully on ice in a styrofoam cooler with a special note from the owners thanking us for supporting their small business. On the back of the card and also online, we found instructions for two different ways of heating the food — in and out of the plastic.

We went with the less messy method in the plastic that required fewer pots since we didn’t have many,  and it only took about 25 minutes to sous vide the meat and less time for the sides before we could serve and enjoy our meal for four, which really was more like a meal for six.

Our two pounds of Feges’ legendary smoky brisket turned out tender, the Loaded Potato Mash was creamy and tasty and the Spicy Korean Braised Greens and Moroccan Spiced Carrots gave us just the flavor kick we wanted to kickoff our football weekend.
